An Easy Mocktail you'll Make and Drink this Summer nearby your Needles

Al fresco dining is here, and maybe a fresh and easy mocktail in the garden? Don’t mind if I do! That is, of course, perfect, even for my children.

Mocktail: a nonalcoholic drink consisting of a mixture of fruit juices or other soft drinks.

Iโ€™m not telling you this easy Mocktail is to keep you hydrated, although thatโ€™s certainly important. Holding a cold drink in your hands, and drinking liquids lower in temperature than you are, cools you down and make it easier to knit. And who doesnโ€™t love a cold glass nearby your needles?

Today, I wanted to share an easy mocktail recipe I enjoy, a refreshing, non-alcoholic fruit and berry drink that tastes just like a sweet mojito.

Easy Mocktail – Blueberry Mint Lemonade

Ingredients (serving 1)
โ€ข 1 cup granulated sugar
โ€ข 1 cup of water
โ€ข 6-8 fresh mint leaves (plus some for garnish)
โ€ข 10-12 fresh blueberries (plus some for garnish)
โ€ข ยฝ lemon squeezed (or lemon juice)
โ€ข 1 teaspoon granulated sugar
โ€ข ยฝ cup sparkling water or club soda
โ€ข ยฝ cup crushed ice (optional)

Add your cup of granulated sugar, and the mint leaves to a small saucepan. With the back of a spoon, smash the mint into the sugar to release the oils from the leaves.
Next, add in the water and turn on low heat, occasionally stirring until the sugar is dissolved.
You just made the simple syrup. Now allow it to cool.
While the syrup is cooling, add your blueberries, the rest of the sugar, and lemon juice to a small bowl. Smash gently.
When the syrup is ready, let’s start assembling.
Add the blueberry mixture to your glass.
Next, add in the simple mint syrup.
Then, the sparkling water.
Mix gently.
Top with more fresh berries and mint leaves for garnish.

You can make all the components of this drink ahead of time and leave it in the fridge for up to 4 days.
The simple syrup can be made days ahead of time. When stored properly in the fridge, it has a shelf life of up to one month.

It is the perfect drink for sitting in the garden and enjoying a hot summer day while knitting.
