Rustic Italian Focaccia

Ingredients:

โ€ข 2 ยพ cups (325 grams) all-purpose flour
โ€ข 1 teaspoon (5 grams) salt
โ€ข 1 teaspoon (5 grams) of sugar
โ€ข 1 tablespoon (7 grams) of active dry yeast
โ€ข 1 cup (240 milliliters) warm water
โ€ข ยผ cup (60 milliliters) olive oil (plus extra for drizzling)
โ€ข Fresh rosemary sprigs
โ€ข Coarse sea salt (for sprinkling on top)

Instructions:

Combine the warm water, sugar, and yeast in a small bowl. Stir gently and let it sit for about 5 minutes until it becomes frothy.
Whisk the flour and salt in a large mixing bowl. Make a well in the center and pour the activated yeast mixture and olive oil. Stir until a shaggy dough forms.
Transfer the dough onto a floured surface and knead for about 10 minutes until the dough becomes smooth and elastic. If the dough is sticky, add a little more flour as needed.
Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for approximately 1 hour or until it doubles in size.
Drizzle olive oil onto a baking sheet or rectangular pan, ensuring it is evenly coated.
Transfer the risen dough onto the prepared pan and gently stretch it to fit the pan. Use your fingertips to create dimples all over the surface of the dough. Cover the dough with a kitchen towel and let it rise again for 30-45 minutes until it puffs up slightly.
Preheat your oven to 425ยฐF (220ยฐC). Drizzle olive oil generously over the surface of the dough. Sprinkle coarse sea salt and fresh rosemary sprigs over the top.
Place the focaccia in the oven and bake for 20-25 minutes until golden brown. The aroma will fill your kitchen, creating a cozy atmosphere for your knitting sessions.
Once baked, remove the focaccia from the oven and let it cool.

Congratulations, you have successfully embarked on a delightful baking journey to create a rustic Italian focaccia that perfectly complements your slow-living lifestyle!
As you enjoy the scrumptious slices of homemade focaccia, embrace the simplicity, appreciate the craftsmanship, and relish the comforting moments of slow living that both knitting and baking offer.
